'A life without sweets, is not much worth living'




If you're a Cadbury's Crunchie fan, then this seriously a recipe you need to try. 

So very easy to make and guaranteed to please, this light and crunchy sweet is a perfect gift, topping or addition to other sweet treats.

I started making this for people for Christmas as a very broke teenager (you can make a hell of a lot of this out of a packet of sugar and a bottle of golden syrup) and it has been a firm favourite ever since I discovered the recipe. It can either be kept plain or dipped in chocolate, wrapped in cellophane with a pretty ribbon it makes a wonderful present. It doesn't have a particularly long shelf life if its kept in cellophane, but honestly I've never known it to be opened and not consumed within 10 minutes.

Children love the 'magic' of making honeycomb. Sienna thinks its amazing how it Whooooshes up the pan when you whisk in the bicarbonate of soda. The cooking part isn't too child friendly as it involves making a very hot sugar syrup however Sienna loves getting involved in the chocolate coating and wrapping up for Christmas gifts. 

I decided to give this little treat a whirl this weekend as an addition to another recipe, but half of it was demolished by Mr W and Sienna before I managed to add it in. I made sure I put the second batch to the side so certain little hands couldn't get a hold of it. 

If you're looking for a really simple and easy treat to make this weekend, give this a go. I promise that it wont disappoint.

- 100g Caster Sugar
- 4 x 15ml tbsp Golden Syrup
- 1 1/2 tsp Bicarbonate of Soda

You will also need a baking tray lined with baking parchment.

Put the syrup and bicarbonate of soda in the pan and mix together until combined you MUSNT stir this once it is on the heat. Place on a moderate heat and allow the mixture to melt. It will then turn into a goo, then a bubbling mass. You're aiming for a colour very close to maple syrup, it should take 3 minutes or so. 
Once you take it off the heat, whisk the bicarbonate of soda (ready for the 'magic'!) the mixture will turn into a big cloud of aerated pale gold. Immediately pour this onto the lined baking tray. 
Leave it on the side to set, then take a rolling pin and gently tap it until it breaks into the desired sized pieces.
